Wow – it feels like I haven’t planned meals in ages!! Crashing at my parent’s house meant I didn’t have to cook dinners for a few weeks, and it was glorious. But now I’m back in my house (with unfinished floors) and back to planning our meals. Here’s what’s on the menu for this week in our house:

Thai Crunch Chicken Salad (from How Sweet Eats) – we love this!! It’s time intensive, but worth it. I’m doing it on a day that my husband’s around to watch Isaac while I make it. Delish!
Loaded Quesadillas (from its all delicious): a nice & easy weeknight dish. I add avocados too!
Spaghetti with meat sauce (Caesar Salad on the side): one of our go-to easy peasy dinners. I make my own sauce and add browned ground beef to it. Add a big salad on the side so you don’t just load up on carbs!
