5 Minute 5 Ingredient Summer Salad Recipe
- 2 tomatoes, chopped (or use the equivalent of cherry/grape tomatoes)
- 1 large cucumber, chopped
- 3/4 cup fresh mozzarella, cubed
- 1/4 cup red onion, finely diced
- 1/3 cup Italian dressing
Combine chopped veggies with the cheese and dressing. Serve immediately, or put it in the refrigerator and eat chilled.

This recipe is easily adjustable if you don’t like certain ingredients, or if you don’t have them on hand. Many times I find myself without a red onion, and I honestly don’t really miss it in the salad!
